Sweet Egg & Rice Muffins

INGREDIENTS

3/4 Cup (180ml) Eezi Egg Liquid Egg Whites (Equivalent to 6 Egg Whites)
3/4 Cup (180ml) Cooked Basmati Rice
1 Tsp Vanilla Essence
3-6g Huletts EquiSweet Sucralose low kilojoule Sweetner (Aspartame-Free)
(Optional) 1Tsp Coffee

 

 DIRECTIONS

  1. Preheat oven to 200 degrees and spray a non-stick Large Muffin baking tin/tray, set aside.
  2. In a large bowl, mix together Egg Whites, Cooked Rice, Sweetener, Vanilla Essence and Coffee
  3. Mix together using a Whisk. 
  4. Pour the Mix into Large Muffin tray. (Depending on size of muffin tray, this mixture should full 2 muffins)
  5. Bake 20-30 minutes. (Or until centre has hardened)

 

RECIPE NOTES

Please note that this recipe is for one complete meal. One meal consists of 2x Muffins. To fill up an entire muffin tray please repeat 3 times. One Muffin Tray makes 3 meals (6 Muffins)
